It’s not very often that you find me cooking but this is something that I don’t mind making and thoroughly enjoy eating afterwards!!
3lb green tomatoes
8 medium onions
1 red and 1 yellow pepper
2pts malt vinegar
1 dessertsp salt
2 tblsp flour (heaped)
1 tblsp cornflour (heaped)
1 1/2lbs white sugar
1/2lb brown sugar
2 dessertsp curry powder (heaped)
1 dessertsp dry mustard
Chop everything into small cubes.
Sprinkle with salt.
Leave for one hour and then drain.
Add vinegar and sugar and simmer for one hour.
Mix dry ingredients together with some of the liquid from the pot.
Add to the pot and simmer for half an hour.
